1. Preheat Oven
Preheat your oven to 350°F. Lightly coat a 9-by-13-inch baking dish with a little olive oil to prevent sticking and make for easier cleanup.
2. Arrange Pork Rinds
Arrange the pork rinds evenly in the prepared baking dish and sprinkle the shredded cheese over them. Bake for about 5 minutes or until the cheese starts bubbling.
3. Cool Cheese and Pork Rinds
Remove the dish from the oven and let it cool on a cooling rack for about 5 minutes to allow the cheese to set slightly.
4. Heat Carnitas
While the cheese and pork rinds are cooling, heat a medium skillet over high heat and add a bit of olive oil. Toss in the Carnitas along with any reserved pan juices and cook until a crispy crust forms on the meat.
