How to Make Mexican Rice: A Classic Comfort Dish

    1. Prepare the Flavorful Puree

In a blender or food processor, combine the garlic, tomatoes, green bell pepper, onion, jalapeño, salt, and half a cup of chicken stock or water. Blend until smooth to create the flavor base for the rice.

    2. Toast the Rice

Heat vegetable oil in a large skillet with a tightfitting lid over medium heat. Add the rinsed long-grain white rice and stir until the grains are well-coated with oil and become golden, releasing a nutty aroma.

    3. Combine Puree and Rice

Pour the prepared puree over the toasted rice in the skillet. Stir to mix well, then increase the heat to bring the mixture to a boil.

    4. Simmer the Rice

Once boiling, cover the skillet with the lid, reduce the heat to low, and allow the rice to simmer gently for 17 minutes. Do not lift the lid during this time.

    5. Rest and Serve

Remove the skillet from the heat and let the rice rest, covered, for an additional 10 minutes. Fluff the rice with a fork before serving alongside your favorite dishes.
