1. Season the Salmon
Lay out the salmon fillets and season each with a pinch of sea salt and a sprinkle of freshly ground black pepper.
2. Prepare the Spice Mixture
Coarsely grind the fennel seeds using a coffee or spice grinder. In a bowl, combine the ground fennel seeds with freshly minced rosemary and the zest of an orange.
3. Crust the Fillets
Gently press the spice mixture onto the seasoned salmon fillets, forming a crust to infuse flavor and seal in moisture.
4. Sear the Salmon
