How to Make Provençal Salmon with Fennel, Rosemary, and Orange Zest

1. Season the Salmon

Lay out the salmon fillets and season each with a pinch of sea salt and a sprinkle of freshly ground black pepper.

2. Prepare the Spice Mixture

Coarsely grind the fennel seeds using a coffee or spice grinder. In a bowl, combine the ground fennel seeds with freshly minced rosemary and the zest of an orange.

3. Crust the Fillets

Gently press the spice mixture onto the seasoned salmon fillets, forming a crust to infuse flavor and seal in moisture.

4. Sear the Salmon

Heat olive oil in a large nonstick skillet over medium-high heat. Once hot, sear the salmon fillets, coated side down, for one minute, then carefully turn over and sear the other side for another minute.

5. Roast the Salmon

Transfer the skillet to a preheated oven at 400°F (200°C). Roast the salmon for 4-8 minutes, depending on desired doneness.
