    How to Make Cod in Grape Leaves with Labneh Tzatziki & Grapes

    1. Prepare the Tzatziki

    In a medium bowl, combine the labneh, finely chopped cucumbers, quartered grapes, shallots, mint, dill, and garlic. Gradually add lemon juice to taste, season with a pinch of salt.

    2. Prepare the Cod

    Preheat the oven to 400ºF. Pat the cod dry, cut into pieces, and sprinkle with salt. Drizzle olive oil on a sheet pan, and wrap the cod pieces in grape leaves, placing them on the pan. Bake for 10 minutes, then broil for 1-2 minutes.

    3. Plating the Dish

    Spoon a generous amount of tzatziki on serving plates. Place the baked fish parcels on top, drizzle with olive oil, and serve with lemon quarters.
