1. Saute Vegetables
Preheat your oven to 350°F (175°C). Lightly oil an 8-by-4-inch loaf pan. Melt butter in a heavy skillet over medium heat and sauté celery and onion until soft, around 5 minutes. Transfer to a large bowl and let cool.
2. Mix Ingredients
Once cool, to the bowl with onions and celery, add ground beef, veal, pork, parsley, sour cream, bread crumbs, thyme, marjoram, and season with salt and pepper. In a small dish, beat the egg with Worcestershire sauce, then pour into the meat mixture. Mix well using a wooden spoon or your hands, then shape into a loaf.
3. Form and Glaze Meatloaf
Place your shaped meatloaf into the prepared loaf pan. Spread chili sauce evenly over the top and drape with bacon slices. Bake in the preheated oven until the meatloaf is firm and browned, about 1 hour.
