1. Sauté Vegetables
Preheat your oven to 350°F. In a skillet over medium heat, melt the butter and sauté the chopped celery and onion until softened and onions are translucent, about 5 minutes.
2. Prepare Meat Mixture
Let the sautéed vegetables cool, then mix them with the ground beef sirloin, ground veal, ground pork, fresh parsley, sour cream, soft bread crumbs, thyme, marjoram, kosher salt, and freshly ground black pepper.
3. Add Egg and Worcestershire Sauce
In a separate bowl, whisk together an egg with Worcestershire sauce. Pour this into the meat mixture and blend until just incorporated.
4. Shape and Top the Meatloaf
Shape the meat mixture into a loaf and place it in the lightly oiled 8-by-4-inch loaf pan. Spread a generous layer of chili sauce on top and lay the bacon slices over it.
5. Bake the Meatloaf
Bake in the preheated oven for about 1 hour, until the meatloaf is browned on top and the bacon is crisped.
6. Rest and Serve
Remove the meatloaf from the oven, let it rest briefly, then slice and serve.
