1. Prepare the Sub Rolls
Preheat the broiler to high heat. Hollow out a bit of the bread from the center of the sub rolls to create a pocket.
2. Make the Meatball Mixture
In a large bowl, soak the bread crumbs from the rolls in half a cup of water. Add an egg, a teaspoon of salt, a generous pinch of pepper, and a finely grated garlic clove. Mix and let it sit for five minutes.
3. Form and Broil the Meatballs
Add ground beef, half a cup of finely grated Parmesan, and two tablespoons of freshly chopped basil to the bread crumb mixture. Form into meatballs and place in an oiled oven-proof skillet. Broil until they develop a brown crust, about 5 to 7 minutes.
4. Warm the Marinara Sauce
Pour the marinara sauce into the skillet with the meatballs and let it warm through.
5. Toast the Sub Rolls
Toast the sub rolls under the broiler for 1 to 2 minutes, then rub with the remaining garlic clove.
6. Assemble the Meatball Subs
Place the broiled meatballs into the toasted rolls, top with slices of mozzarella or provolone cheese, and broil for another minute or two until the cheese is browned and bubbly.
7. Garnish and Serve
Sprinkle additional Parmesan, tear fresh basil leaves, and crack black pepper over the meatball subs before serving.
