    How to Make Kofte Mix

    1. Mix Meat with Onion and Parsley

    Place the finely chopped onion, parsley, and ground meat into a large bowl. Use your hands to mix these ingredients together thoroughly to ensure even distribution.

    2. Add Seasonings and Knead

    Add the salt, baharat, baking soda, and club soda to the meat mixture. Knead with your hands for up to 10 minutes until the mixture becomes uniform and sticky, indicating that the proteins have been well developed.

    3. Test Seasoning and Texture

    Cook a small portion of the meat mixture in a skillet until browned on both sides to test for seasoning and texture. Adjust the salt or spices in the remaining mixture if necessary.

    4. Resting Period

    Cover the bowl with plastic wrap, pressing it against the surface of the meat. Refrigerate the mixture for at least 4 hours to allow flavors to meld and baking soda to tenderize the meat.
