How to Make Kibbe-Style Lamb Meatballs with Herbed Yogurt Sauce

1. Prepare Bulgur and Lamb Mixture

Soak half a cup of fine bulgur wheat in a bowl for 20 minutes. Once ready, drain and mix with ground lamb, diced onion, chopped parsley, ground cumin, kosher salt, cayenne pepper, ground allspice, and minced garlic cloves.

2. Broil the Meatballs

Preheat the broiler, oil a baking sheet, shape the lamb mixture into meatballs, and arrange on the sheet. Brush with olive oil and broil for 5 to 10 minutes until golden and firm.

3. Prepare Herbed Yogurt Sauce

In a blender, combine Greek yogurt, chopped parsley, remaining minced garlic, chopped dill, lemon juice, seeded jalapeño, and kosher salt. Blend until smooth.

4. Serve Meatballs with Sauce

Serve the broiled meatballs with the herbed yogurt sauce on a serving dish.
