    How to Make Lentil Sloppy Joes

    1. Cook Onion and Bell Pepper

    Heat the olive oil in a large pot over medium heat. Add the chopped onion and bell pepper, stirring occasionally, until they become soft and slightly translucent, about 8 minutes.

    2. Add Garlic and Spices

    Add the minced garlic, chili powder, dry mustard, and smoked paprika to the pot. Sauté for 1 to 2 minutes until the garlic becomes fragrant.

    3. Combine Lentils and Tomatoes

    Stir in the cooked lentils, crushed tomatoes, tomato paste, brown sugar, apple cider vinegar, salt, and pepper. Add vegetable broth to achieve desired consistency and simmer for 15 to 20 minutes.

    4. Serve on Buns

    Allow the mixture to cool slightly before serving on hamburger buns with optional toppings.
