How to Make Spicy Korean Beef Lettuce Cups

1. Pickle the cucumber

In a bowl, combine the thinly sliced cucumber with the seasoned rice vinegar. Set this aside and let the flavors meld together while you prepare the rest of your ingredients.

2. Make the Sriracha mayo

In a small bowl, mix together the mayonnaise and Sriracha sauce until well combined. Set this aside as well.

3. Prepare the sauce for beef

In a bowl, combine the soy sauce, packed brown sugar, minced garlic, and toasted sesame oil. Stir until the sugar is dissolved and everything is well mixed.

4. Cook the beef

Heat a 12-inch nonstick skillet over high heat. Add the ground beef and cook it for about 8-10 minutes. You'll know it's ready when the juices have evaporated and the beef starts to brown and sizzle in its own fat, giving it a rich, deep flavor.

5. Add sauce to beef

Once the beef is nicely browned, add the soy sauce mixture to the skillet. Cook for about 2 minutes, or until the sauce is nearly evaporated and has coated the beef thoroughly.

6. Assemble lettuce cups
