1. Marinate Pork Chops
Marinate the pork chops with 2 tablespoons of chopped kimchi. Let them rest in the refrigerator for at least 30 minutes, or up to 24 hours for deeper flavor infusion.
2. Sear Pork Chops
Wipe the pork chops to remove excess marinade. Heat a skillet with a tablespoon of olive oil over medium-high heat. Sear the pork chops for about 6 minutes, until golden brown on both sides.
3. Cook Pork Chops Through
Continue cooking the pork chops in the skillet for another 7 minutes, until they are cooked through. Transfer the chops to a plate and cover with foil to rest.
4. Prepare the Sauce
Add half a cup of white wine to the skillet, using the liquid to deglaze the pan. Stir in 1 teaspoon of honey and the remaining 4 tablespoons of kimchi. Simmer and reduce the sauce for about 3 minutes.
