Dark
Dark agave syrup offers a strong, molasses-like flavor and is less filtered to retain more of the agave plant's minerals and nutrients. It's ideal for bold recipes.
Amber
A medium-intensity agave syrup with a richer, caramel-like flavor, suitable for recipes where a more pronounced sweetness is desired.
Light
Agave syrup in its light form is a mild, almost neutral-flavored sweetener, making it versatile for a variety of dishes and beverages.

Baking: Agave syrup can be used in baking as a substitute for sugar or honey. Use about 2/3 cup of agave for every 1 cup of sugar, and reduce other liquids in the recipe by about 1/4 to 1/3 to maintain the proper moisture balance.
Glazing: Agave syrup is excellent for creating glazes for meats, tofu, or vegetables. Brush it on towards the end of the cooking process to avoid burning, as its sugars can caramelize quickly under high heat.
Sweetening: Agave syrup is a liquid sweetener and can be used to sweeten drinks, such as teas, coffees, and cocktails, as well as dressings and sauces. It blends well without the need for excessive stirring or heating.
