How to Make Lemon-Oregano Grilled Potatoes

1. Prepare Grill

Clean and oil your grill grate thoroughly to ensure a smooth surface and prevent the potatoes from sticking.

2. Grill Potatoes

Place your potatoes on the grill. Cook for about 3 to 5 minutes, flipping halfway through. Once grill marks appear, move them to a cooler side of the grill or turn the burners to medium-low. Continue cooking for an additional 5 to 8 minutes until tender.

3. Prepare Garlic-Oil Mixture

While the potatoes are cooking, mince the garlic, chop the oregano, and grate the lemon zest. Combine these ingredients in a skillet.

4. Toss Potatoes

Remove the potatoes from the grill and transfer to a bowl. Toss them with the garlic-oil mixture, ensuring each piece is well-coated.

5. Garnish and Serve

Add the fresh oregano, additional lemon zest, salt, and pepper to the bowl. Serve the potatoes with optional lemon wedges for an extra burst of citrus.

Variations

Grilled Chicken & Potato Skewers

Add chunks of marinated chicken breast to skewers along with the potato wedges, brushed with the same lemon-oregano marinade.

Herb Variants

Rosemary & Garlic Grilled Potatoes

Grilled Shrimp & Potato Foil Packs

Combine potatoes with peeled shrimp, lemon, oregano, and a touch of white wine, wrapped in foil and grilled.

Cheesy Delight

After grilling, toss the potatoes with a sprinkle of grated Parmesan or crumbled feta cheese for a salty, umami-rich finish. For a tangier twist, try goat cheese.

Mediterranean Grilled Potatoes

Add chopped Kalamata olives, feta cheese, and capers to the grilled potatoes.
