    How to Make Grilled Turmeric-Lemon Swordfish Steaks

    1. Prepare Swordfish

    Prepare your swordfish by removing any fat and skin, then cut each slice into three pieces. This ensures even cooking and easier handling on the grill.

    2. Create Marinade

    In a blender, combine 2 tablespoons of olive oil, lemon juice, chopped onion, garlic, ginger, green chilies or cayenne pepper, 1.5 teaspoons of salt, turmeric, and 0.5 teaspoon of freshly ground pepper. Blend on high speed for about 20 seconds until you achieve a smooth paste.

    3. Marinate Swordfish

    Place the marinade in a nonmetallic bowl. After washing and patting dry the swordfish pieces, add them to the bowl and mix well to coat all pieces evenly. Cover the bowl and refrigerate for at least 2 hours.

    4. Prepare Grill

    Prepare your grill by heating it so that the cooking grate is about 4-5 inches from the fire. Have the remaining oil, some salt, pepper, and a pastry brush ready for basting.

    5. Grill Swordfish

    When your grill is ready, brush the marinated swordfish pieces with oil and place them on the grill. Sprinkle with a bit of salt and pepper, and baste with more oil as they cook. Cook for about 10-12 minutes on the first side until you see little brown patches.

    6. Turn Swordfish

    Turn the swordfish pieces over, sprinkle again with salt and pepper, and baste with more oil. Grill for another 10 minutes or until the second side is lightly browned and the fish is cooked through.

    7. Garnish and Serve

    Once done, remove the swordfish from the grill and place it on a warmed platter. Garnish with lemon wedges and sprigs of parsley. Serve the grilled swordfish with sides like Rice with Spinach, Carrots and Peas with Ginger and Chinese Parsley, Tomato and Cucumber with Lemon Juice, or boiled parsley potatoes.
