How to Make Spiced Peach and Citrus Chuma

1. Warm the Garlic

Warm a tablespoon of extra-virgin olive oil in a small saucepan over medium heat. Add the minced garlic and let it cook for about 2-3 minutes, just until it becomes fragrant and starts to turn golden.

2. Blend the Ingredients

Transfer the warmed garlic and oil into a blender. Add the toasted and ground cumin seeds, caraway seeds, sweet paprika, red chile flakes, finely grated lemon zest, diced peaches, water, and fresh lemon juice. Blend the mixture until smooth.

3. Season and Store

Taste the chuma and season it with kosher salt and freshly ground white pepper to your liking. If not using immediately, transfer to a jar and cover the surface with a thin layer of olive oil. Store in the refrigerator for up to two weeks.
