    How to Make Apricot Mostarda

    1. Combine and Boil

    Combine the thinly sliced dried apricots, simple syrup, and dry white wine in a medium pot and bring them to a boil.

    2. Simmer Apricots

    Once the mixture reaches a boil, lower the heat and allow it to simmer gently for about 15 minutes. The apricots will soften and become plumper, absorbing the liquid and enriching their natural flavor.

    3. Add Spices

    After simmering, transfer the contents of the pot to a bowl and add hot red pepper flakes, mustard seeds, and mustard oil. Stir to distribute the spices evenly.

    4. Cool and Rest

    Allow the mixture to cool to room temperature, then cover the bowl and refrigerate the mostarda overnight to let the flavors develop and settle.
