How to Make Tikin Xik—Grilled Achiote Fish with Green Beans and Molcajete Salsa

    1. Prepare the Grill

Fire up your grill to a medium-high heat, ready for grilling the fish and green beans.

    2. Create Achiote Marinade

In a food processor, blend achiote paste with fresh lime juice until smooth to make the marinade.

    3. Marinate the Fish

Coat the fish fillets with the achiote-lime marinade evenly in a baking dish, using about two tablespoons.

    4. Microwave Green Beans

Place green beans in a bowl with a little water, cover with plastic wrap, and microwave for about three minutes until they are crisp-tender.

    5. Grill Fish and Green Beans

Lightly oil the fish fillets and green beans before placing them on the grill. Grill the fish for 3 to 4 minutes on each side and the green beans for about 3 minutes until lightly browned.

    6. Serve the Dish

Arrange the grilled fish and green beans on plates, serve with lime wedges and a generous helping of Rustic Roasted Tomato Salsa.
