    How to Make Fresh-Cured Sardines

    1. Prepare the Sardines

Sprinkle the scaled and filleted sardines generously with salt and freshly ground black pepper. Arrange the sardine fillets in a shallow dish.

    2. Add Garlic, Lemon, and Vinegar

Tuck thin slices of garlic and lemon between the fillets, then drizzle with two teaspoons of red wine vinegar.

    3. Add Herbs and Bay Leaves

Scatter a handful of fresh herbs—think savory, parsley, thyme, and marjoram—over the top, along with two bay leaves.

    4. Pour Liquids

Pour the juice of half a lemon over the sardines, followed by three tablespoons of extra-virgin olive oil.

    5. Cure the Sardines

Allow the sardines to cure for about an hour. If you prefer them chilled, place them in the refrigerator.

    6. Serve

Once cured, the sardines are ready to serve. Enjoy them as is, with a spoonful of the marinade drizzled over each serving.
