1. Prepare the Sardines
Sprinkle the scaled and filleted sardines generously with salt and freshly ground black pepper. Arrange the sardine fillets in a shallow dish.
2. Add Garlic, Lemon, and Vinegar
Tuck thin slices of garlic and lemon between the fillets, then drizzle with two teaspoons of red wine vinegar.
3. Add Herbs and Bay Leaves
Scatter a handful of fresh herbs—think savory, parsley, thyme, and marjoram—over the top, along with two bay leaves.
