How to Make Cheesy Chicken Enchiladas

1. Preheat Oven and Mix Filling

Preheat your oven to 350°F (175°C). In a large bowl, combine the shredded chicken, 1 cup of cheese, chopped onions, chopped bell peppers, and a pinch of salt and pepper.

2. Prepare Baking Dish

Spread half a cup of enchilada sauce evenly across the bottom of the baking dish.

3. Warm Tortillas and Fill

Warm the corn tortillas briefly to make them pliable. Fill each tortilla with the chicken mixture and roll them up tightly, placing seam-side down in the baking dish.

4. Sauce and Cheese Topping

Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle the remaining cheese evenly over the sauce.

5. Bake

Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.

6. Serve

Serve the Cheesy Chicken Enchiladas hot, garnish if desired.
