1. Prep Filling
Combine the pork, cabbage, ginger, garlic, and white parts of the scallions in a bowl. Mix with 2 tablespoons of soy sauce and 1/4 cup of water.
2. Form Dumplings
Place a dumpling wrapper on a clean surface. Brush half of the wrapper's edge with beaten egg. Add a rounded teaspoon of filling to the center. Fold the wrapper over the filling to create a half-moon shape. Pinch the edges to seal.
3. Cook Dumplings
Heat 2 tablespoons of oil in a large nonstick skillet over medium-high heat. Add the dumplings in a single layer, allowing them to touch slightly. Cook for about 2 minutes until the bottoms are lightly browned. Add 1/4 cup water per dozen dumplings, then cover and simmer on medium heat for 3 minutes.
4. Dipping Sauce
Mix the remaining soy sauce, the green parts of the scallions, and vinegar to create the dipping sauce.
5. Finish Cooking
Uncover the dumplings, raise the heat to medium-high, and cook until the bottoms are dark brown and crisp, and the water has evaporated. Add more oil if necessary.
6. Serve
Serve the dumplings hot with the prepared dipping sauce.
