How to Make Pine Nut Vinaigrette

1. Combine Vinegar, Fish Sauce, and Water

Start by combining the red wine vinegar, fish sauce, and water in a small bowl or cup. This mixture will form the acidic base of your vinaigrette, giving it a bright and tangy flavor that complements the rich pine nuts.

2. Process Pine Nuts and Other Ingredients

In a food processor, add the lightly toasted pine nuts, smashed garlic, and dried chile flakes, along with half of the vinegar mixture. Process these ingredients until they form a slightly smooth puree.

3. Emulsify the Mixture

With the motor running, gradually add the olive oil and the remaining vinegar mixture into the food processor. This slow addition helps ensure an even emulsification, resulting in a vinaigrette that is thick but still pourable.

4. Taste and Adjust

Finally, taste the vinaigrette and adjust the flavors as needed. You can add more vinegar, fish sauce, or chile flakes to suit your preference. If the dressing is too thick, add a bit more water to reach your desired consistency.
