    How to Make Roasted Tomato–Amba Dressing

    1. Preheat Oven and Prepare Tomatoes

    Preheat your oven to 425ºF (220ºC). Place the cherry tomatoes and halved garlic cloves in a baking dish or ovenproof skillet. Drizzle with 4 tablespoons of olive oil and sprinkle with ½ teaspoon of salt and the ground black pepper. Toss to coat evenly.

    2. Roast the Tomatoes

    Roast the tomatoes in the preheated oven for about 30 minutes, or until they are bursting and caramelized. Allow to cool to room temperature.

    3. Prepare the Dressing

    In a bowl, whisk together the cooled roasted tomato mixture with the amba, then stir in the red wine vinegar, the remaining 2 tablespoons of olive oil, and the remaining ½ teaspoon of salt until well combined.
