A rich and flavorful homemade sour cream and onion dip with caramelized onions, sour cream, Greek yogurt, and a touch of garlic and lemon.

1. Caramelize Onions and Shallots
Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, add in the thinly sliced yellow onions and shallots. Season with kosher salt and freshly cracked black pepper. Stir frequently as they cook for about 15 to 20 minutes, until they turn golden brown. Reduce heat to low and continue to cook for another 45 to 55 minutes, stirring occasionally, until they are a deep dark golden brown. Let them cool slightly and then chop them to a dip-friendly size.
2. Combine with Dairy and Seasonings
In a large bowl, combine the warm, chopped onions and shallots with the sour cream and full-fat Greek yogurt. Stir in the fresh lemon juice and finely grated garlic clove. Adjust the seasoning with salt and pepper if needed. Drizzle with olive oil and sprinkle with finely chopped chives before serving.
