1. Sauté Garlic
Begin by heating 2 teaspoons of avocado oil in a medium skillet over medium heat. Add 1 tablespoon of minced garlic and sauté for about 3 to 5 minutes, or until the garlic turns golden and releases its wonderful aroma.
2. Wilt Spinach
Next, add 8 ounces of baby spinach to the skillet. Stir and cook until the spinach is completely wilted. This will only take a few minutes. Once the spinach is wilted, transfer the mixture to a food processor and process until finely chopped.
3. Blend Avocado and Vinegar
Now, add the flesh of 4 ripe Hass avocados and ¼ cup of seasoned rice vinegar to the food processor. Process until the mixture is smooth and creamy.
4. Combine Spinach and Avocado Mixture
Scrape the avocado mixture into a medium bowl, then add the spinach puree and mix until well combined. Season with coarse sea salt to taste.
5. Fold in Scallions, Parsley, and Serrano Chiles
Fold in ¼ cup of thinly sliced scallions, ¼ cup of minced fresh parsley, and 3 tablespoons of diced seeded serrano chiles.
6. Adjust Flavor with Lemon Juice
Finally, taste the dip and add fresh lemon juice to brighten the flavors and balance the richness of the avocado.
Incorporate chopped artichokes and sun-dried tomatoes into the dip, and substitute feta cheese for some of the cream cheese for a tangy twist. Top with a drizzle of olive oil and a sprinkle of za'atar or dried oregano before serving.
