1. Prepare Egg Mixture
Crack the eggs into a medium bowl and add the superfine sugar. Beat together until well combined and slightly frothy.
2. Soak Bread
Soak the crustless white sandwich bread in the whole milk until soft and mushy. Mash it up and add to the egg mixture.
3. Cook Omelet Base
Preheat the broiler. Melt the unsalted butter in a 10-inch skillet over medium heat. Pour in the egg mixture and cook for about 2 to 3 minutes until the bottom is set but the top is still a bit liquidy.
4. Broil Omelet
Transfer the skillet to the broiler to set the top, about 1 minute. Watch carefully to avoid overcooking.
5. Caramelize and Serve
Carefully transfer the omelet to a serving plate. Optionally, sprinkle with confectioners’ sugar and use a mini blowtorch to caramelize. Heat the rum, ignite it, and pour over the omelet for a dramatic presentation.
