1. Preheat and Prep
Heat your oven to 350 degrees F (175 degrees C). Line a 9-inch square baking pan with parchment, leaving an overhang for easy removal.
2. Crumbly Foundation
In a food processor, pulse the vanilla wafers with granulated sugar until fine crumbs form. Blend in melted butter until the mixture is uniformly moist. Press this into the bottom of your prepared pan, creating a firm, even layer. Bake for 15 to 17 minutes until it turns a shade darker and emits a sweet, baked fragrance.
3. Lime Alchemy
Whisk condensed milk, egg yolks, lime juice, and zest in a medium bowl while the crust bakes.
4. Layer and Bake
Pour the lime filling over the hot crust. Return to the oven and bake for about 15 minutes, or until the filling is just set. Let it cool on a rack, then chill in the refrigerator for a minimum of 4 hours to firm up.
5. Release and Cut
Use a knife to loosen the edges of the chilled dessert. Lift out of the pan using the parchment 'handles.' Before serving, whip the heavy cream with confectioners’ sugar to soft peaks, and spread or dollop over the top. Slice into 16 bars.
