How to Make Apple Pie

1. Prepare the Apples

Begin by melting the butter in a large sauté pan over medium-high heat. Once the butter has melted, add the apple wedges and cook them for about 5-7 minutes, stirring occasionally, until they just start to soften.

2. Add Spices and Sugar

Next, whisk together the ground allspice, ground cinnamon, kosher salt, and 3/4 cup sugar. Sprinkle this mixture over the apples in the pan, then stir to coat the apples evenly. Lower the heat and continue to cook the apple mixture for another 3-5 minutes, stirring occasionally, until the apples soften further and the spices are well combined.

3. Thicken the Filling

Sprinkle the flour and cornstarch over the apple mixture, then cook and stir for another minute or two until everything is well mixed. Remove the pan from the heat, add the apple cider vinegar, and give it a good stir. Scrape the apple mixture onto a rimmed baking sheet to cool quickly, or let it cool in the pan if you're not in a hurry.

4. Preheat the Oven

While the apple mixture is cooling, preheat your oven to 425°F and place a large baking sheet in the oven to heat up. This ensures that the bottom crust of your pie will be crispy and well-cooked.

5. Prepare the Pie Crust

Take one disc of your pie dough and roll it out on a lightly floured surface until it’s about 12 inches in diameter. Fit this dough into a 9-inch pie plate, leaving about a half-inch overhang. Place the prepared pie crust in the freezer while you roll out the top crust to about 10-11 inches in diameter.

6. Assemble the Pie

Once the apple mixture has cooled, remove the bottom crust from the freezer and fill it with the apple mixture. Cover the filling with the top crust, pressing the edges together to seal. Trim any excess dough, then crimp the edges with a fork. Cut a few small vents in the top crust to allow steam to escape, then brush the top with the beaten egg and sprinkle with the remaining tablespoon of sugar.

7. Bake the Pie

Place the pie on the hot baking sheet in the oven and bake it at 425°F for 20 minutes. Then, reduce the oven temperature to 375°F and continue baking for another 30-40 minutes, until the crust is golden brown and the filling is bubbling.

8. Cool the Pie
