1. Prepare Water Bath
Start by pouring 1 to 2 inches of water into a medium saucepan and bringing it to a gentle simmer. While the water heats up, find a medium stainless steel bowl that will rest comfortably over the saucepan without touching the water.
2. Combine Ingredients
In this bowl, combine the egg yolks, grade B maple syrup, dark brown sugar, and a tiny pinch of kosher salt. Beat these ingredients together with a whisk or a handheld electric mixer for about a minute until they are well mixed.
3. Add Rum and Beat
Next, add the dark rum and continue beating the mixture.
4. Cook Over Simmering Water
Place the bowl over the simmering water, ensuring the bottom of the bowl does not touch the water. Now, beat the mixture continuously until it becomes thick and frothy. This should take about 8 to 10 minutes if you’re whisking by hand, or 4 to 5 minutes with a mixer. You'll know it's ready when it forms a thick ribbon that trails off the whisk or beater.
5. Stabilize Mixture
Once thickened, remove the bowl from the heat and beat the mixture for another 30 seconds to stabilize it. This helps to ensure a smooth and velvety texture.
6. Add Vanilla and Serve
For the best flavor and texture, serve this Maple-Rum Cream immediately. If you need to hold it for a bit, you can keep it warm over very low heat in a double boiler.
