How to Make Hearty Tomato-Tenderized Beef Curry

1. Marinate the Meat

Begin by placing the stewing beef into a large bowl. Add the salt, turmeric, finely chopped tomato, minced ginger, minced shallots, and red chile powder. Drizzle in one tablespoon of peanut oil and mix everything thoroughly to coat the beef evenly. Cover the bowl and let the meat marinate for at least 30 minutes to allow the flavors to meld. If you plan to marinate for longer than an hour, place the bowl in the refrigerator.

2. Sear the Meat

Heat the remaining two tablespoons of peanut oil in a large wok or a wide, heavy pot over medium-high heat. Once the oil is hot, add the marinated beef along with all the marinade. Toss the meat in the hot oil and cook it until all the pieces have changed color. This step is crucial as searing the meat locks in the flavor and gives the curry a rich color.

3. Simmer

After the meat has been seared, pour in the four cups of water. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Let the curry cook slowly for about two hours, stirring occasionally. During this time, the beef will become meltingly tender, and the flavors will develop beautifully. You'll know it's ready when the meat is tender enough to break apart easily and a layer of oil floats on the surface.

4. Adjust and Serve
