How to Make Coconut Hot Chocolate

    1. Prepare Cocoa Mixture

Whisk together the cocoa powder with 1/3 cup of boiling water in a small bowl to dissolve the cocoa powder, creating a smooth mixture.

    2. Heat Coconut Milk

In a saucepan over medium heat, combine the coconut milk, dark brown sugar, and a pinch of kosher salt. Stir the mixture gently for about two minutes, until the sugar dissolves completely.

    3. Combine and Melt Chocolate

Pour the prepared cocoa mixture into the saucepan, followed by the chopped bittersweet chocolate. Whisk together until the chocolate melts completely and the mixture is smooth and hot.

    4. Add Vanilla

Remove the saucepan from the heat and stir in the vanilla extract.

    5. Serve

Pour the hot chocolate into cups, and if desired, top with meringue.
