A delicious and simple chickpea flour flatbread from the South of France, perfect as an appetizer or side.
Chickpea Flour, sifted

1. Preheat the Oven and Prepare the Batter
Preheat your oven to 450°F (230°C). In a large bowl, combine the chickpea flour, salt, and black pepper. Add room-temperature water and 2 tablespoons of olive oil to the dry mixture and whisk until smooth. Let the batter rest for 10 to 15 minutes.
2. Cook the Socca
Place the preheated cast-iron skillet over medium heat and add 1 tablespoon of olive oil. Pour the batter into the skillet, spreading it evenly. Bake for about 15 minutes in the oven at 450°F (230°C) until the edges are lightly browned.
3. Broil for Crispiness
Drizzle an additional tablespoon of olive oil over the Socca and place it under the broiler for a few more minutes or continue baking for 5 more minutes until the top is beautifully browned.
4. Serve the Socca
Remove the Socca from the oven, cut it into wedges, and serve immediately while it's still warm.
