1. Preheat Oven and Prepare Skillet
Preheat your oven to 450°F (230°C) and place a 12-inch (30cm) cast-iron skillet inside to heat.
2. Mix Batter Ingredients
In a mixing bowl, whisk together chickpea flour, salt, pepper, water, and 2 tablespoons of olive oil until smooth. Let the mixture rest for 10 to 15 minutes.
3. Bake the Socca
Carefully remove the hot skillet from the oven, coat it with 1 tablespoon of olive oil, pour in the batter, and return it to the oven. Bake for about 15 minutes, or until the edges are firm and lightly browning.
4. Optional Broiling
For extra crispiness, broil the socca for a few minutes until the top is nicely browned.
5. Serve the Socca
Remove the socca from the oven, cut it into wedges, and serve hot and crispy.
