1. Preheat the Oven
Preheat your oven to 450°F (230°C). Place a 12-inch (30cm) cast-iron skillet in the oven to heat up.
2. Prepare the Batter
In a large bowl, whisk together chickpea flour, salt, and a dash of pepper. Gradually add water and 2 tablespoons of olive oil, whisking until smooth. Let the batter rest for 10 to 15 minutes.
3. Bake the Socca
Carefully remove the hot skillet from the oven and coat it with 1 tablespoon of olive oil. Pour the batter into the skillet, spreading it evenly. Bake for about 15 minutes until firm and the edges are lightly browned.
4. Broil for a Crisp Top
Brush the top of the socca with the remaining tablespoon of olive oil and place under the broiler until browned on top.
5. Serve the Socca
Remove the socca from the oven, let it cool slightly, then slice into wedges and serve immediately.
