1. Marinate the Chicken
In a large zip-top bag, combine the chicken chunks with 2 tablespoons of soy sauce, 0.5 teaspoon of Sriracha, and 2 teaspoons of sesame oil. Seal the bag and mix well, ensuring the chicken is evenly coated. Let it marinate in the refrigerator for at least 1 hour or overnight.
2. Soak the Skewers
While the chicken marinates, soak your 8-inch wooden skewers in water for about 30 minutes to prevent them from burning on the grill.
3. Preheat and Oil the Grill
Preheat your grill pan or outdoor grill to low heat. Lightly oil the grill pan with ghee to prevent the chicken from sticking.
4. Thread the Chicken
Thread the marinated chicken chunks onto the soaked skewers. Arrange them in a way that allows for even cooking.
5. Grill the Skewers
Place the skewers on the preheated grill and cook over low heat, flipping them halfway through. This should take about 10 to 15 minutes until the chicken is golden brown and cooked through, with no pink in the center.
6. Prepare the Spicy Peanut Sauce
In a small bowl, mix the remaining 1 tablespoon of soy sauce, 0.25 teaspoon of Sriracha, 1 teaspoon of sesame oil, and 2 tablespoons of peanut butter. Season with a pinch of pink salt and freshly ground black pepper, stirring until smooth.
7. Serve the Chicken Skewers
Once the chicken skewers are cooked, serve them hot with a small dish of the spicy peanut sauce on the side for dipping.
