1. Prepare the Sauce
In a 2-cup liquid measuring cup, mix together the soy sauce, brown sugar, water, bourbon, sesame oil, and pepper. Microwave this mixture for 2 minutes to help dissolve the sugar, creating a smooth and balanced marinade.
2. Marinate the Chicken
In a bowl, toss the chicken pieces with the cornstarch and 2 tablespoons of the soy sauce mixture. This will help the chicken develop a nice coating when cooked.
3. Cook the Chicken
Heat the vegetable oil in a 12-inch nonstick skillet over medium-high heat. Once the oil is hot, add the chicken and cook for about 10 minutes, stirring occasionally, until the chicken is browned and fully cooked through.
4. Add Aromatics and Sauce
Once the chicken is cooked, add the garlic and ginger to the skillet. Stir in the remaining soy sauce mixture and bring it to a boil. Allow it to cook for 6-8 minutes, stirring occasionally, until the sauce has thickened to a syrupy consistency. You’ll know it’s ready when it leaves a wide trail when you drag a rubber spatula through it.
5. Finish and Serve
Remove the skillet from the heat and stir in the cider vinegar. This will give a slight tang to balance the sweetness of the glaze. Serve the savory bourbon glazed chicken immediately and enjoy!
