1. Prepare Panko Mixture
Toss the panko bread crumbs with the olive oil in a bowl. Microwave the mixture for about 1 to 3 minutes until the panko turns a light golden brown, stirring halfway through.
2. Prepare Egg Mixture
In a second shallow dish, whisk together the egg, 2 tablespoons of hot sauce, flour, garlic powder, 0.125 teaspoon of salt, and 0.125 teaspoon of pepper.
3. Prepare Chicken
Prepare the chicken by pounding the breasts to an even thickness and then cutting each breast in half to create four pieces. Pat the chicken dry with paper towels and season lightly with salt and pepper.
4. Coat Chicken
Dredge each piece of chicken in the egg mixture, making sure it's fully coated, then press it into the toasted panko mixture. Ensure each piece is well coated with the panko.
5. Cook Chicken
Spray the basket of your air fryer with vegetable oil spray and arrange the chicken pieces in a single layer. Cook at 400 degrees for 12 to 16 minutes, flipping and rotating the pieces halfway through. The chicken is done when it is crisp and the internal temperature reaches 160 degrees.
6. Prepare Spicy Mayo
While the chicken is cooking, combine the mayonnaise with 1 tablespoon of hot sauce in a small bowl to create a spicy mayo.
7. Assemble Sandwich
To assemble the sandwiches, spread the spicy mayo on the bottom halves of the hamburger buns. Place a piece of crispy chicken on each bun, then top with shredded iceberg lettuce and a few jarred sliced jalapeños. Cover with the top halves of the buns.
