How to Make Chipotle-Orange Glazed Chicken Breasts

1. Prepare Orange and Chipotle Mixture

Grate 1 teaspoon of orange zest and squeeze 2/3 cup of juice from two fresh oranges. Mince one small shallot and 1-2 tablespoons of canned chipotle chile in adobo sauce. Combine these ingredients with 2 teaspoons of minced fresh thyme in a small saucepan.

2. Add Molasses and Thicken the Glaze

Add 1 tablespoon of molasses to the saucepan. Place over medium heat and bring the mixture to a gentle simmer. Dissolve 0.75 teaspoon of cornstarch in a small amount of water and stir it into the saucepan. Continue to cook, stirring occasionally, until the glaze thickens and becomes glossy, about 3-5 minutes. Season with salt to taste.

If the chicken breasts are thick, pound them to an even thickness to ensure even cooking. Lightly season the chicken breasts with salt.
