How to Make Burmese-Style Aromatic Grilled Chicken

1. Rinse and Prepare Chicken

Rinse your chicken pieces thoroughly under cold water and then pat them dry using paper towels. Place the chicken in a large bowl.

2. Prepare Marinade

In a separate bowl or mortar, combine 0.5 teaspoon of salt, 0.25 teaspoon of turmeric, and 0.5 teaspoon of red chile powder. Add 1 tablespoon of minced garlic and 1 tablespoon of minced ginger. Stir in 2 tablespoons of fish sauce.

3. Marinate Chicken

Pour the aromatic mixture over the chicken pieces and rub it in well with your hands. Make sure every piece of chicken is evenly coated with the marinade. Let the chicken marinate for at least 30 minutes.

4. Preheat Grill

While the chicken is marinating, preheat your grill to medium heat.

Once the grill is hot, place the chicken pieces on the grate. Turn them frequently to ensure even cooking and to avoid scorching. Cook until the chicken is browned evenly and cooked through to the bone.
