1. Sauté Apples and Shallots
Melt a tablespoon of unsalted butter in a 12-inch skillet over medium heat. Add thinly sliced Granny Smith apple and shallot, along with a teaspoon of freshly chopped rosemary and a pinch of kosher salt. Sauté for about 8 to 10 minutes, stirring occasionally, until apples are tender and shallots are translucent.
2. Prepare Bread with Apple Butter and Cheese
Spread a generous layer of apple butter on four slices of country bread. Lay slices of sharp Cheddar cheese on top, and spoon the sautéed apple and shallot mixture over the cheese.
3. Grill the Sandwiches
In the same skillet, melt another tablespoon of butter over medium heat. Place the Cheddar-topped bread in the skillet and the apple-topped bread beside it. Add 2 teaspoons of water to the pan and cover with a lid. Cook for about 5 to 7 minutes, until the cheese has melted and the bread is golden brown. Combine the two halves to complete the sandwich.
