How to Make Cheddar Fondue with Irish Whiskey

    1. Infuse Garlic

Rub a halved garlic clove all over the inside of your Dutch oven or heavy-bottomed saucepan to infuse a subtle garlic aroma.

    2. Simmer Wine

Pour in one cup of dry white wine and set the heat to medium-high. Allow the wine to come to a gentle simmer.

    3. Prepare Cheese Mixture

Toss 12 ounces each of grated Gruyère and aged cheddar cheese with one and a half tablespoons of cornstarch in a large bowl.

    4. Melt Cheese

Once the wine is simmering, reduce the heat to medium-low and gradually add the cheese mixture to the pot, stirring constantly until each addition is completely melted.

    5. Add Flavorings

Stir in one to two tablespoons of Irish whiskey, one tablespoon of fresh lemon juice, kosher salt, freshly ground black pepper, and a sprinkle of freshly grated nutmeg. Allow the mixture to bubble for one to two minutes.
