1. Preheat Oven and Prepare Cauliflower
Preheat the oven to 450 degrees. Cut the cauliflower into halves and break down into smaller florets, aiming for pieces no larger than an inch thick.
2. Toss Cauliflower with Oil and Seasonings
In a large bowl, toss the cauliflower florets with extra-virgin olive oil, and season with salt and pepper. Arrange in a single layer on a sheet pan.
3. Roast Cauliflower
Place the sheet pan on the bottom rack of the oven and roast for 15-20 minutes until the underside of the cauliflower is golden brown.
4. Add Parmesan and Finish Roasting
Flip the cauliflower florets over for an even roast, then sprinkle the finely grated Parmesan cheese over the top. Return to the oven for another 7-10 minutes until the cheese is melted and golden.
5. Cool and Serve
Allow the roasted cauliflower to cool for a few minutes to let the Parmesan cheese become crispy. Then, gently transfer to plates for serving.
