    How to Make Classic Skillet-Seared Smash Burgers

    1. Heat the Skillet

    Add the oil or butter to a large cast-iron or stainless-steel skillet over medium heat.

    2. Form the Beef

    Gently divide the ground chuck into 8 loosely gathered orbs, about 4 ounces each and 2 inches in height. Avoid forming tight patties.

    3. Increase Heat

    Turn the heat under the skillet to high. Place half of the beef orbs into the skillet, spaced well apart.

    4. Smash the Burgers

    Use a stiff metal spatula to press down each orb into a patty about 4 inches in diameter and 1/2 inch thick. Season with salt and pepper.

    5. Sear the Patties

    Cook without moving until a deep crust forms, around 2 minutes. Flip the burgers carefully with the spatula. If using cheese, add a slice to each patty now.

    6. Finish Cooking

    Cook for about a minute more, or until the meat is cooked through. Remove from skillet, place on buns, and add toppings as desired.

    7. Repeat

    Repeat the process with the remaining beef orbs. Serving two patties on one bun can be a hearty option.
