How to Make Classic Diner-Style Burgers

1. Preparing the Skillet

Warm up your large cast-iron or stainless-steel skillet with a touch of neutral oil or a small pat of unsalted butter over medium heat.

2. Forming the Patties

Take the ground chuck and gently form it into loose orbs. No need to shape perfect patties just yet.

3. Searing the Patties

Press the meat orbs into the skillet with a stiff metal spatula, transforming them into hearty patties. Sear them on high heat for less than two minutes to form a deep crust.

4. Adding Cheese

Lay a slice of cheese on each patty, letting it melt as the burger finishes cooking for another minute or so.

5. Final Sear and Assemble
