    How to Make Chorizo Pork Burgers

    1. Prepare Grill or Broiler

    Heat your grill or broiler to high.

    2. Mix Meat and Form Patties

    In a large bowl, combine the ground pork, chorizo, kosher salt, smoked paprika, ground cumin, and garlic. Gently mix until just combined, then form the meat into 6 to 8 loose patties.

    3. Prepare Onions

    Mix the olive oil, sherry vinegar, and honey in a small bowl. Brush this mixture over the onion slices and cook them on the grill or under the broiler for about 2 minutes on each side.

    4. Grill Patties

    Place the patties on the grill or under the broiler. Cook for 3 to 6 minutes on each side, aiming for a medium doneness with an internal temperature of about 140°F. Just before they are done, top each patty with Manchego cheese to melt.

    5. Toast Buns

    If desired, toast the hamburger buns on the grill or broiler until lightly golden.
