1. Prepare the Char
Start by ensuring your Arctic char fillets are at the right temperature; either thaw them if they're frozen, or keep them in the freezer if you're not using them immediately. This should take about 30 minutes.
2. Mix Burger Ingredients
Chop the Arctic char into small pieces and place them in a mixing bowl. Add the panko bread crumbs, finely diced scallions, finely diced red bell pepper, prepared horseradish, egg white, wasabi fumi furikake, kosher salt, and freshly ground black pepper. Mix everything together thoroughly.
3. Form Patties
Form the mixture into four patties, each about ¾-inch thick. Place the patties in the refrigerator for 30 minutes to help them firm up.
4. Cook the Patties
Heat the vegetable oil in a 12-inch cast-iron pan over medium-high heat. Once the oil is hot, carefully place the char patties in the pan. Cook each side for about 4 minutes, aiming for an internal temperature of 135°F to ensure the burgers are perfectly cooked and juicy.
5. Rest and Serve
After cooking, let the patties rest on a plate for 3 minutes. Serve the char patties on onion rolls. Add a dollop of Kewpie mayonnaise for extra flavor if desired.
