1. Combine Ingredients
In a large bowl, mix together the rolled oats, chopped Medjool dates, cashew pieces, pumpkin seeds, chia seeds, ground cinnamon, and ground nutmeg. Add the nondairy milk and maple syrup, and stir thoroughly to combine. Cover the bowl with a lid and let it sit in the fridge overnight.
2. Finish and Serve
In the morning, remove the muesli from the refrigerator. It should have thickened overnight. Stir well to combine. If desired, add additional nondairy milk to reach your preferred consistency, and an extra drizzle of maple syrup for added sweetness. Serve immediately.
