1. Rinse Quinoa
First, rinse the quinoa under cold water using a fine-mesh sieve until the water runs clear.
2. Cook Quinoa
In a medium saucepan, combine the rinsed quinoa, water, 1 cup of coconut milk, maple syrup, salt, and cinnamon stick. Bring the mixture to a gentle simmer and cook for about 20 minutes, until the quinoa is tender and has absorbed all the liquid.
3. Toast Almonds
