1. Brown the Beef
Heat the olive oil in a large pot over medium-high heat. Season the beef cubes with salt and pepper, then add them to the pot. Brown the beef on all sides, about 5-7 minutes.
2. Sauté the Onions
Remove the beef from the pot and set aside. In the same pot, add the chopped onions and cook until they are translucent, about 5 minutes.
3. Combine and Simmer
Return the beef to the pot with the onions. Add the chopped tomatoes and sweet paprika. Stir to combine and bring the stew to a simmer. Cover and let it cook for 1.5 hours, or until the beef is tender.
