    How to Make Loaded Sweet Potatoes with Black Beans and Cheddar

    1. Preheat Oven and Prepare Sweet Potatoes

    Preheat your oven to 425 degrees. Scrub the sweet potatoes under running water, pat them dry, and rub them with olive oil. Sprinkle the potatoes with a pinch of kosher salt, then place them on a parchment-lined sheet pan and roast for 30 to 40 minutes until soft and caramelized.

    2. Season and Stuff Sweet Potatoes

    After roasting, let the sweet potatoes cool slightly. Slice them open, fluff the insides with a fork, and season with a pinch of kosher salt and some black pepper. Sprinkle half of the shredded sharp cheddar cheese inside each sweet potato, followed by a spoonful of cooked black beans.

    3. Bake and Serve

    Return the sweet potatoes to the oven and bake for an additional 5 minutes, or until the cheese is melted and the beans are heated through. Serve hot with the melted cheddar cheese perfectly mingling with the black beans and sweet potatoes.
